Specialising in traditional and continental styles of butchery, the focus is on offering a top quality product to predominantly trade customers who have utilised the business for many years. Customers include high end restaurants and hotels with deliveries available on a daily basis or as required. Two delivery vehicles are operated and the majority of deliveries are made within the Glasgow area although they are undertaken in Edinburgh and beyond as required. The majority of custom is generated from the trade customers, supplemented by shop sales.
Custom is very much through word of mouth and effectively no marketing has been undertaken. New custom is generated via recommendation and there is undoubtedly considerable scope to increase the customer base and sales via promotion of the quality products on offer.
Livestock are sourced from local farmers who have been supplying the business for many years to ensure the quality of the product. A local slaughterhouse is utilised for slaughter. Additional product is sourced from a local abattoir, again, they have been supplying the business since its opening. All products are manufactured on site including haggis, black pudding, white pudding, sausages, burgers and cooked meats are all home made.
